Copper River Salmon with Scrambled Egg and Green Vegetables

Start your day with a nutritious twist – Copper River Salmon with perfectly scrambled eggs and vibrant green vegetables, cooked to perfection with coconut oil and almond milk. This flavorful dish, accented with a hint of lemon, chives, sea salt, and black pepper, offers a wholesome and delicious breakfast experience, combining the richness of wild Alaskan salmon with the freshness of steamed broccoli and spinach.

Cooking time: 20 minutes

 

Ingredients

2 Copper River Salmon fillets

3 eggs (chicken)

1 tablespoon coconut oil

50ml almond milk

4 broccoli florets

2 good handfuls of spinach

Juice of 1 lemon

A few sprigs of chives to serve, finely chopped

Sea salt and black pepper

 

 

Directions

1 Thaw the Copper River Salmon.

2 Heat the pan with coconut oil, fry the salmon until white fat marbles out, squeeze half the lemon, and season with black pepper.

3 Steam the broccoli for 4 minutes simultaneously.

4 Crack eggs into a saucepan, add almond milk, and a pinch of sea salt. Stir gently, avoiding over-mixing.

5 Heat on high, then reduce to medium-low, stirring frequently until partially set.

6 Add spinach to the side of the broccoli and steam both for an additional 2 minutes.

7 Serve the Copper River Salmon, eggs, and vegetables, squeezing the remaining lemon juice, and garnishing with chives and black pepper.
