Experience the exquisite flavors of the Copper River Sockeye Salmon with Spring Vegetables. Pan-seared to perfection, the Copper River sockeye salmon is served atop a bed of Mizuna greens, accompanied by golden potatoes and sautéed spring vegetables. Elevate your dining with this vibrant and nutritious dish, optionally drizzled with a delightful mustard vinaigrette.

 Ingredients
1-1 1/2 lbs. Copper River sockeye salmon fillets, skin on
2 large russet potatoes, scrubbed clean and cut into about 1/4" slices, boiled just until tenderÂ
1 lb. mixed spring vegetables (pea pods, baby carrots, green onions, green beans, radishes)Â
Small bunch of leafy greens, such as flowering brassica, Raab, baby kale, or chardÂ
Olive oilÂ
Salt and pepper, to tasteÂ
Mizuna or other greens for serving platterÂ
Mustard vinaigrette (optional)

 Directions
1Â Pat the Copper River sockeye salmon fillet dry and sprinkle with salt and pepper on both sides.
2Â Heat olive oil in a skillet over medium-high heat.
3Â Add the Copper River sockeye salmon fillets, skin side down. Cook Copper River sockeye salmon fillet for about 3-4 minutes.
4Â Gently turn Copper River sockeye salmon fillets over and cook Copper River sockeye salmon fillet for an additional 2-3 minutes until the flesh is opaque and flakes easily with a fork.
5Â Place the Copper River sockeye salmon fillets on top of the Mizuna greens on a serving platter, and cover to keep warm.
6Â Add more olive oil and sliced potatoes to the hot pan, sprinkle with salt and pepper, and cook until golden.
7Â Transfer to a platter and keep warm.
8 Heat olive oil in another skillet with spring vegetables, salt & pepper, and sauté until tender-crisp.
9Â Add leafy greens to skillet, salt & pepper to taste, and cook until bright green and barely tender.
10Â Transfer to a serving platter and drizzle with a little mustard vinaigrette.
